Queso Dip

Queso Dip

INGREDIENTS:

  • 2 Tbsp Extra Virgin Olive Oil

  • 1 sweet onion, chopped

  • 3 cloves garlic, minced

  • 2 Jalapeño Peppers, seeded and minced

  • 12 oz American Cheese, shredded

  • 4 oz Pepper-Jack Cheese

  • 1 cup Whole Milk

  • Kosher Sea Salt (to taste)

  • Freshly ground Black Peppercorns (to taste)

  • 2 medium Roma Tomatoes, seeded and diced

  • 4oz can of green chilis, chopped

  • 1/4 cup Cilantro, chopped (optional)

  • Tortilla Chips

DIRECTIONS: 

  1. In a large heavy skillet over medium-heat, heat olive oil.

  2. Add diced onion and cook until translucent (about 5 minutes).

  3. Add garlic, jalapeño, and cook until fragrant (an additional 1 minute)

  4. Add American and Pepper-Jack cheeses, milk and stir until completely melted.

  5. Season with Kosher sea salt and freshly ground pepper to taste.

  6. Stir in diced Tomatoes, Green Chilis and Cilantro (optional) before serving.

  7. Serve with warmed Tortilla Chips.
