This balsamic is produced by combining cask-aged balsamic vinegar with fresh orange pulp and reducing the blend over open-air fire. The reduction is then placed in oak barrels for aging. When the balsamic reaches the density of 1.33, the product is removed from the barrels and lightly filtered. The lightness and freshness of this balsamic makes it ideal for use with goose, duck, pheasant, or other game. It also works well with fried seafood, quiches or vegetables.
