Marinated Feta Cheese Cubes
A Mediterranean staple. Feta cheese cubed and marinated in olive oil and herbs. Can be used as a spread on bread or an addition to salads, or just to eat as a snack.
1 ½ cups extra virgin olive oil
½ tsp Telicherry black peppercorns
3 cloves garlic, minced
2 Fresno or chili peppers sliced
2 Tbs fresh oregano, chopped
2 tsp fresh rosemary, chopped
2 Tbs fresh thyme
8oz block of feta cheese, cut into ½” cubes
Combine EVOO, black peppercorns, garlic, peppers, oregano, rosemary and thyme and microwave on high for 60 seconds.
Let stand for 10–15 minutes
Cube feta cheese into ½” cubes and place into oil mixture. Be careful to not stir, as it can break up the feta.
Cover and refrigerate overnight.
After using the feta cheese, the reserved liquid and herbs can be used as a salad dressing.
