Mango Chutney

Mango chutney is a sweet and spicy condiment as a delicious accompaniment for cheese, chicken, pork, lamb or curries. It’s a wonderful and colorful condiment with poppadum’s or naan bread.

INGREDIENTS:

  • 2 fresh ripe mangoes, peeled and chopped

  • (1) 2” piece of fresh ginger root, peeled and diced

  • 6 cloves garlic, minced

  • 1 large sweet onion, finely chopped

  • 1 tsp chili pepper flakes, or one chili pepper (seeds removed and diced)

  • 1 tsp Garam Masala

  • 1 cup brown sugar

  • 1 1/4 cups distilled white vinegar

  • 1/2 cup golden sultana raisins

  • 1/2 tsp yellow mustard seeds (optional)

  • 1 tsp fresh turmeric root, peeled and diced. (substitute turmeric powder if you can’t find fresh turmeric)

DIRECTIONS:

  1. Combine brown sugar and vinegar and saute on low heat until the sugar dissolves.

  2. Add the ginger, garlic and onion and saute until onions are softened.

  3. Add remaining ingredients and simmer over low heat for about 30 minutes until it becomes thick and syrupy, stirring occasionally.

  4. Pour into a small sterilized hot mason jar. Screw lid onto mason jar and place in a simmering water bath for 15 additional minutes.

  5. Remove from water bath and let cool until the lid seals.

  6. Store in refrigerator after opening.
