Guacamole Dip

INGREDIENTS:

  • 3 large ripe avocados

  • 1/2 finely diced red onion

  • 2 roma tomatoes, seeded and diced

  • 3 Tbsp cilantro, roughly chopped (optional)

  • 2 Jalapeño peppers, seeded and finely diced

  • 2 garlic cloves, minced

  • 1 lime freshly juiced

  • 1/2 tsp Kosher sea salt

  • 1/2 tsp freshly ground pepper

DIRECTIONS:

  1. Finely dice the red onion and set aside

  2. Seed and dice the roma tomatoes

  3. Roughly chop the cilantro leaves

  4. Seed and finely dice the jalapeño peppers

  5. Peel garlic cloves and mince

  6. Squeeze a whole lime

  7. Slice the avocados in half, removing the large seed from each, and skin and place avocado flesh in mixing bowl

  8. Mash the avocados with a large fork. I like mine pretty chunky, but make yours as smooth as you like

  9. Gently combine the tomatoes, onion, cilantro, jalapeño peppers, garlic, lime juice, salt and pepper with the mashed avocados

  10. Immediately serve or cover and refrigerate, as the avocado’s will begin to turn brown pretty quickly.
