Bacon Wrapped Asparagus

 

A great way to change the appeal of asparagus. This makes a great appetizer for parties, a special vegetable offering for weeknight dinner. Whatever the occasion, this is an easy recipe that delivers great results and everyone asking for more.

INGREDIENTS:

  • About 1 pound of asparagus spears

  • One bacon strip for each asparagus spear

  • Fresh ground pepper to top the bacon

  • Maple Syrup (to brush on the bacon)

  • 1/4 cup freshly grated parmesan cheese

DIRECTIONS:

  1. Preheat oven to 400 degrees F

  2. Remove the “woody” end of the asparagus spear (one hint is to bend the asparagus spear with your hands, and it will break right above the woody stem. You can then trim the remaining spears the same distance from the bottom)

  3. Rinse asparagus and pat dry

  4. Line a baking sheet with parchment paper (you can do these in a skillet as well if you want the bacon more crispy)

  5. Wrap each asparagus spear with a slice of bacon, wrapping it all the way around each spear.

  6. Place spears on the baking sheet, leaving about an inch or two between each spear so that the bacon can get crispy. Brush each bacon wrapped spear with a little maple syrup.

  7. Bake 20 - 25 minutes (depending on the thickness of your bacon) Halfway through, flip the spears over

  8. Remove from oven when bacon is done, remove from oven and sprinkle a little fresh grated parmesan cheese over the top to melt into the hot asparagus and bacon spears.

  9. If you don’t want to use maple syrup, you can drizzle some balsamic vinegar over the top once removed from oven.
